- 800g of lamb chops
- 2 chopped onions
- 2cm grated ginger
- 1 cup pitted olives
- 3 cinnamon sticks
- 1/2 cup dates
- 4 cloves of garlic
- 3 or 4 bay leaves
- 3 tablespoons of honey
- 1 teaspoon cumin
Season the chops with salt and pepper and set aside.
In a small pot sauté the onion with a little olive oil, add the ginger, cumin, and meat. Mix well, add salt and let the onion soften a little and allow the meat to change color (approx. 10 minutes).
Add olives, cinnamon, bay leaf and semi cover with water. Add the honey and cook for 1 hour. Add the dates and cover and cook for about 40 minutes more.
Turn off the heat and add parsley and chopped mint.
Serve over basmati rice and plenty of cooking juice!
