- 1 whole leg of lamb
- 4 heads of garlic
- 1 kg scallions
- 1 bundle of thyme
- 1/2 cup apple cider vinegar
- 2 tablespoons ground black pepper
- 2 tablespoons curry powder
- 1 cup olive oil
- 2 tablespoons honey
- 3 tablespoons brown sugar
- fresh thyme
- 1 liter white wine
- 1/2 liter beef broth
Make incisions in the leg with the tip of a knife and insert pieces of garlic cloves inside.
Prepare a mojo with the vinegar, pepper, curry, olive oil and honey, place the piece in a baking dish and paint the whole piece well.
Sprinkle with salt, brown sugar, half the thyme bundle, the remaining garlic heads cut in half, the white wine and the broth.
Cover with aluminum foil and bake for 2 hours at medium temperature.
Remove from the oven, remove the aluminum foil, add the scallions and finish cooking for another hour, making sure that the meat and scallions get well mixed with the cooking liquid.
